Title: Applesauce Spice Cake

CAKE
1cUnsalted butter, softened
2cSuperfine sugar
2cApplesauce
3cFlour
1tsCinnamon
1tsNutmeg
1/2tsMace
1 3/4tsBaking soda
1cCoarsely chopped pecans
1cGolden raisins
1tsVanilla
FROSTING IN DIRECTIONS

cut a strip of waxed paper to fit the bottom of a 9" tube pan. grease the paper and the pan. dust the pan with flour and set aside. Cream butter and sugar, until light and fluffy, then fold in applesauce. Don't worry if ingredients don't blend completely. Sift flour, spices and soda together. set aside 1/4 cup of flour mixture and dredge raisins and nuts with it. Fold remaining flour mixture into butter/sugar. Then add vanilla and raisin/nut mixture. Mix well, pour into pan. Bake for 1 1/2 to 1 3/4 hour, use toothpick to test for doneness. Let cool slightly, loosen sides of pan and turn out onto rack. Let cool completely before icing. Brown Sugar Frosting: 2 cups light brown sugar 6 Tbsp heavy cream 1/4 C melted butter 1 tsp vanilla 1 C sifted confectioners. sugar Place all frosting ingredients except confectioners. sugar and vanilla in small saucepan. Bring slowly to a full rolling boil, stirring occasionally until smooth. Remove from heat, add vanilla and confectioners sugar, stir quickly until smooth. Quickly pour over the cooled cake, allowing it to run down the sides and set. Do not try to control the flow of the icing, as it hardens very quickly. The icing looks best when allowed to flow naturally. Serves 12 or more.
